  • 3/4 cups Manchego cheese, shredded

  • some cherry tomato, for garnish
  • some parsley, for garnish

  • Preheat oven to 350 °F.
  • Mix beaten eggs, spinach, onion, and shredded cheese. Season with salt and pepper.
  • Grease muffin cups with cooking spray. Place ham in muffin cups and pour egg mix.
  • Bake for about 20 minutes.
  • Unmold. Garnish with cherry tomatoes and parsley.
