  • 1 tablespoon vegetable oil
  • 1/4 onions, sliced
  • 3 serrano chiles, sliced
  • 6 tomatoes, cut into small-sized cubes
  • 1/2 cups chicken broth
  • 3 cups pork rinds
  • some salt
  • some pepper
  • some fresh cilantro, leaves, for garnish
  • some beans, for serving

  • In a deep skillet, fry onion and pepper with a dash of oil until they turn bright. Add tomato and cook for 5 minutes. Add chicken broth and bring it to a boil. Add pork rinds. Season with salt and pepper. Add cilantro leaves. Cover and cook for 10 minutes.
  • Serve and garnish with more cilantro leaves.
  • Serve Mexican-style chicharrón with beans and corn tortillas.
