  • Cook beans in a pressure cooker with plenty of water and onion for about 40 minutes. Allow the pressure to release, before opening the pressure cooker.
  • Add pork chump, pork knuckle, and pork backbone to the pot. Add salt and lock lid. Cook for 20 more minutes.
  • Once pressure has been released, open, and add 1 epazote sprig. Cook uncovered for 10 more minutes.
  • Serve pork and beans with pico de gallo with radish and tortillas. Garnish with cilantro.
