Pork and Beans with Pico de Gallo

  • 1 kilo black beans, soaked
  • some water, for the beans
  • 1/4 onions, for the beans
  • 1/2 heads garlic, for the beans
  • 500 grams pork chump
  • 250 grams pork knuckle
  • 250 grams pork backbone
  • some salt
  • 1 sprig epazote
  • some pico de gallo, for serving
  • some radish, sliced, for serving
  • some corn tortillas
  • some cilantro, finely chopped, for garnish

  • Cook beans in a pressure cooker with plenty of water and onion for about 40 minutes. Allow the pressure to release, before opening the pressure cooker.
  • Add pork chump, pork knuckle, and pork backbone to the pot. Add salt and lock lid. Cook for 20 more minutes.
  • Once pressure has been released, open, and add 1 epazote sprig. Cook uncovered for 10 more minutes.
  • Serve pork and beans with pico de gallo with radish and tortillas. Garnish with cilantro.
