Pork Leg with Plum Sauce

  • 2 kilos pork leg
  • 300 milliliters white wine
  • 2 pinches ground pepper
  • 3 cloves garlic, mashed
  • 20 grams salt
  • 300 grams prunes
  • 20 grams butter
  • 10 grams fresh thyme
  • 5 grams rosemary
  • 350 milliliters cola
  • 500 milliliters water

  • In a bowl, mix wine, pepper, garlic, and salt. Inject pork leg with mixture.
  • Preheat oven to 356 °F.
  • Place pork leg on a baking dish with a bit of water on the bottom. Season pork leg with salt and pepper previously. Add thyme and rosemary. Once golden brown, cover with aluminum foil.
  • Bake for 50 minutes. Remove from oven and check level of doneness. If pork leg is cooked through, return to oven for 10 minutes without aluminum foil until golden brown.
  • In a skillet, melt butter and sautée prunes. Season and add one-third of cola. Cook to desired consistency.
  • Transfer to a blender, add remaining soda, and blend until smooth. Slice pork leg and pour plum sauce over.
