Preparation
In a bowl, mix wine, pepper, garlic, and salt. Inject pork leg with mixture.
Preheat oven to 356 °F.
Place pork leg on a baking dish with a bit of water on the bottom. Season pork leg with salt and pepper previously. Add thyme and rosemary. Once golden brown, cover with aluminum foil.
Bake for 50 minutes. Remove from oven and check level of doneness. If pork leg is cooked through, return to oven for 10 minutes without aluminum foil until golden brown.
In a skillet, melt butter and sautée prunes. Season and add one-third of cola. Cook to desired consistency.
Transfer to a blender, add remaining soda, and blend until smooth. Slice pork leg and pour plum sauce over.
Presentation
Serve pork leg with plum sauce with plenty of mashed potatoes.
