Pork Ribs Adobo

Juicy and mildly spicy, these pork ribs adobo are a great recipe to prepare for any Christmas feast. Best served with new potatoes and red rice on the side, these pork ribs are cooked in a mouthwatering adobo sauce prepared with guajillo, chipotle, and ancho chiles for a delicious main course that will delight all your guests.

  • 2 cloves garlic, roasted, for the adobo sauce
  • 1/2 onions, roasted, for the adobo sauce
  • 1 tomato, roasted, for the adobo sauce
  • 5 guajillo chiles, charred and rehydrated, for the adobo sauce
  • 2 chipotle chiles, charred and rehydrated, for the adobo sauce
  • 3 ancho chiles, charred and rehydrated, for the adobo sauce
  • 1/4 teaspoons cumin, whole, toasted, for the adobo sauce
  • 1 pinch salt, for the adobo sauce
  • 1 teaspoon allspice berry, for the adobo sauce
  • 1/2 cups white vinegar, for the adobo sauce
  • 1/2 cups orange juice, for the adobo sauce
  • 3 tablespoons vegetable oil
  • 1 kilo pork ribs, chopped
  • salt and pepper

  • For the adobo sauce: On a griddle over medium heat, roast garlic, onion, tomato, chiles, and allspice berries. Soak chiles in warm water for 5 minutes or until soft.
  • Transfer roasted ingredients and rehydrated chiles to a blender. Add soaking water, cumin, salt, vinegar, and orange juice. Blend to a smooth sauce.
  • In a skillet over medium heat, heat oil. Sear pork ribs. Season with salt. Once brown, add potatoes and adobo sauce. Cook for 20 minutes or until pork ribs are cooked. Adjust seasoning.
  • Serve pork ribs with adobo sauce spooned over. Garnish with fresh cilantro and serve with vegetables on the side.
