These red breakfast enchiladas are stuffed with scrambled eggs and machaca, also known as shredded beef jerky, smothered with a succulent red sauce, and topped with cream, cheese, onion, and cilantro!

  • For the red enchilada sauce: In a deep skillet, add oil, onion, garlic, tomatoes, serrano chiles, árbol chiles, allspice, and cilantro. Cook until tomatoes soften.
  • Pour chicken broth into the skillet. Cook until it reduces by half. Transfer all ingredients to a blender and blend until smooth.
  • In a small pot, add oil and sauce. Fry for 10 minutes. Reserve.
  • For the machaca con huevo stuffing: In a bowl, beat the eggs. Season with salt and pepper.
  • In a skillet add oil, machaca beef, and egg. Cook until cooked through.
  • For assembling the red breakfast enchiladas: Fry tortillas with oil. Place on paper towels to remove excess oil.
  • Stuff each tortilla with eggs and fold to make the enchiladas.
  • Arrange the enchiladas on a plate. Spoon sauce over them. Garnish with sour cream, panela cheese, onion, and cilantro.
