  • 1/4 cups Worcestershire sauce, for the BBQ sauce
  • 1/2 cups ale beer, for the BBQ sauce
  • 1/2 cups raw sugar, for the BBQ sauce

  • 1/4 cups chipotle chile in adobo sauce, for the BBQ sauce
  • 2 tablespoons Tabasco sauce, for the BBQ sauce
  • 1/4 cups honey, for the BBQ sauce
  • 3 cups ale beer, for cooking the pork ribs

  • For the marinade: In a bowl, place all the powdered ingredients and olive oil and mix to a thick and spreadable consistency. Marinate pork ribs in previous preparation for 1 hour in the fridge.
  • For the BBQ sauce: In a small pot over medium heat, melt butter. Add all the ingredients for the BBQ sauce one by one and cook until thick. Season with salt and pepper and set aside.
  • In a deep skillet over high heat, sear pork ribs until no part of the surface is raw. Bathe pork ribs in BBQ sauce until completely covered. Fill skillet with ale beer, cover with aluminum foil, and cook for 2 hours or until tender, constantly bathing pork ribs with their drippings.
  • Once cooked through, remove from the stovetop, cut, and spoon more BBQ sauce over. Serve stovetop BBQ ribs with mac & cheese.
