  • In a blender, combine roasted onion, roasted garlic, sea salt, black pepper, cumin, oregano, cloves, orange juice, and lime juice and blend until smooth. In a bowl, place pork steak and pour in marinade. Let marinate for at least 2 hours in the fridge. Set aside.
  • For the cucumber salad: In a bowl, combine cucumbers, cilantro, lime juice, salt, and pepper. Mix thoroughly with a spoon. Set aside.
  • For the pickled onions: In a bowl, combine roasted red onion, charred Habanero chile, cilantro, lime juice, and plenty of salt and pepper. Mix thoroughly with a spoon. Set aside.
  • For the salsa: In a molcajete, place tomatoes and crush to a purée. Add red onion, lime juice, cilantro, salt, and pepper. Crush thoroughly until incorporated. Set aside.
  • Remove marinated pork from fridge. Roast pork on a rack with hot coal for 8 minutes. Flip and roast for at least 8 more minutes or until cooked through. Remove from heat.
  • Serve traditional poc chuc hot on a platter with pickled onions, avocado, cucumber salad, salsa, radish, frijoles de la olla, tortillas, and white rice with fried plantains.
