  • For the chipotle sauce: In a pot with water over medium heat, cook tomatoes until soft. Remove tomatoes from water and set aside.
  • Transfer cooked tomatoes to a blender. Add onion, garlic, chipotle chile, and tomato purée and blend until smooth. Pour blended sauce into a pot with hot vegetable oil. Add chicken broth, season with salt and pepper, and cook for 10 minutes over medium heat stirring occasionally. Set aside.
  • In a blender, combine onion, garlic, spearmint, water, and plenty of salt and pepper and blend until smooth. Strain and set the food scraps aside.
  • In a bowl, place ground beef and add the ingredients from step 3. Add soaked rice and egg and adjust seasoning with salt and pepper. Mix until a pliable texture is obtained. Form 1-inch ground beef balls with your clean hands and repeat until all the mixture is used up.
  • Once the chipotle sauce comes to a boil, place meatballs in the pot and cook over medium-low heat for 15 more minutes.
  • Serve meatballs with chipotle sauce garnished with a bit of spearmint and with frijoles de la olla on the side.
