  • 1/2 cups olive oil
  • 2 ancho chiles, trimmed and seeded
  • 1 pasilla chile, trimmed and seeded
  • 1/4 cups morita chile, trimmed and seeded
  • 1/4 cups árbol chile, trimmed and seeded
  • 2 tablespoons sesame seeds
  • 4 cloves garlic, unpeeled
  • 1 pinch coarse salt, for crushing

  • For the salsa macha: Heat a skillet over medium heat with oil. Fry chiles, sesame seeds, and garlic. Remove from heat and cool. Peel previously fried garlic.
  • Place ingredients in a molcajete. Add salt and crush adding oil little by little until a salsa is obtained. Serve.
