  • For the mole paste: Heat a pot with vegetable oil and fry all ingredients except Mexican chocolate and piloncillo. Change oil as many times as needed, ideally twice. Give time to each ingredient to fry without burning. Cool all ingredients.
  • Grind all fried ingredients in a grinder or a food processor to a soft, uniform paste. Do not remove all the fat from the mole paste.
  • Heat a pot over low heat with pork lard and fry mole paste, Mexican chocolate, and piloncillo for 5 minutes.
  • Remove mole from heat. Cool and store.
