  • 10 pasilla chiles, trimmed and seeded
  • 1/4 white onions
  • 1 clove garlic, peeled and de-germed
  • 5 tomatillos, cut into quarters
  • 100 milliliters beer, ale or lager
  • 20 milliliters vegetable oil
  • 3 allspice berries
  • 2 pinches coarse salt
  • 80 grams Cotija cheese

  • In a skillet with oil, char pasiilla chiles. In the same skillet, roast garlic, onion, and tomatillos. Transfer previous ingredients to a blender, add beer, 1 pinch of salt, and pepper and blend until smooth. In a skillet, fry blended mixture and season with remaining salt. Serve traditional salsa borracha garnished with shredded or crumbled Cotija cheese.
