  • Preheat oven to 392 ºF.
  • For the blackberry jam: In a pot over low heat, add blackberries and sugar and cook for about 30 minutes or until a thick consistency is obtained. Let cool and set aside.
  • On a floured surface, roll out puff pastry until it is 0.1-inch thick. Using a 3.9-inch round cutter, cut out puff pastry discs.
  • Fill puff pastry discs with blackberry jam and cream cheese. Seal empanadas by pressing the edges with your fingers. Arrange blackberry cream cheese empanadas on a baking sheet and brush with egg.
  • Bake blackberry cream cheese empanadas for 20 minutes or until golden brown. Let cool and garnish with icing sugar.
