  • For the dough: Mix flour, yeast, and salt. Add milk, condensed milk, vanilla, and egg. Knead until all ingredients are perfectly incorporated. Add sugar in three parts waiting for it to fully incorporate each time. Add butter in three parts waiting for it to fully incorporate each time. You must obtain a very elastic and moist dough.
  • Transfer dough to a greased container. Add orange zest and cover. Let rise until it doubles in size. Punch down dough and refrigerate until firm.
  • Once dough is ready, cut portions of about 2.1 ounces each. Set aside a bit of dough to make the bones. Ball dough portions and arrange in a baking sheet (as shown in the video). Add more flour to the dough you set aside for the bones. Knead until firm. Make strips and shape them using your fingers (as shown in the video).
  • Cover breads with plastic wrap and let rise until they double in size. Using your finger, poke the dough; if it springs back, it is ready. Bake at 347 °F for 25 minutes.
  • Once you remove the bread from the oven and while still hot, baste with butter and coat with sugar. Let cool and set aside.
  • For the guava filling: Heat a pot over medium heat and add guavas, sugar, orange juice, vanilla, cinnamon, and star anise. Cook until sauce thickens for 10 minutes. Remove from heat. Cool and set aside.
  • Beat cream cheese and place in a piping bag to easily fill the bread.
  • Cut bread in half using a knife and fill with cream cheese and guava filling.
