Easy
  • Preheat oven to 356 ºF.
  • Dissolve dry yeast in warm milk.
  • In a mixer, combine dissolved yeast, sugar, flour, milk powder, matcha, and salt. Mix until perfectly incorporated. Add eggs and butter. Keep mixing for 10 minutes or more to get an elastic and homogenous dough.
  • Place dough on a floured surface. Shape dough and lightly knead with your hands. Transfer dough to a greased bowl. Cover with plastic wrap. Let rise for an hour or until it doubles its size.
  • For the crust: In a mixer, combine butter, icing sugar, flour, and matcha. Mix until perfectly incorporated. Cover with plastic wrap and refrigerate.
  • Transfer dough to a floured surface and gently punch air out of dough. Divide dough into 2.1-ounce portions and shape conchas.
  • Transfer conchas to a greased and floured baking sheet. Cover each concha with a piece of crust. Using a knife, slightly cut squares on the crust or use a concha cutter and slightly press it on the crust. Sprinkle granulated sugar on top and let rise for 20 minutes or until conchas double their size.
  • Bake conchas for 12 minutes or until done. Remove from oven and let cool.
  • Dust matcha on top and serve matcha Mexican conchas.
