  • 1 cup pancake mix
  • 1 cup sugar

  • 2 sticks butter
  • 1 dash cow's milk, warm
  • 1 teaspoon vanilla essence
  • 1 piloncillo, shredded, or 1 cup sugar

  • In a large bowl, combine flour, pancake mix, sugar, and vanilla essence. Add butter and mix until a crumbly consistency is obtained.
  • Add eggs and mix. Add milk little by little and knead dough for 10 minutes until an even and non-sticky dough is formed. Cover bowl with plastic wrap and let sit for 15 minutes.
  • Form even dough balls. On a floured surface, roll out dough balls with a rolling pin to form a 0.1-inch thick circle.
  • On a hot griddle, cook traditional gorditas de azúcar on both sides.
