  • For the sauce: Combine tomato, onion, garlic, chipotle chile, chicken broth, piloncillo, salt, and pepper in a blender and blend until a homogenous mix is obtained. Reserve.
  • For the fideo seco: Fry fideo pasta on a small pot over medium heat with enough oil for 5 minutes. Add sauce and stir until incorporated. Cover and cook until liquid evaporates. Adjust seasoning and reserve.
  • For the fideo seco cake: Add fideo seco in individual baking pans and fill up to three-quarters. Place a layer of fried chorizo and a slice of Manchego cheese on top. Bake until cheese broils.
  • Unmold fideo seco cake and serve with pickled red onion and fresh cilantro.
