  • In a bowl, add beef tenderloin, cumin powder, salt, pepper, and soy sauce. Mix thoroughly. Let marinate for 15 minutes.  
  • On a chopping board, cut red onion and green onion stalks into thin strips.
  • In a skillet or wok over high heat, add oil and marinated beef tenderloin. Cook for 3 minutes until cooked through. Gently stir beef tenderloin and set aside in a bowl.
  • In the same skillet or wok, cook onion, manzano chile, and tomato over medium heat for 4 minutes. Add green onion stalks, apple cider vinegar, beef tenderloin, and beef broth and gently stir until completely incorporated. Pour sesame seed oil into the skillet and cook for 4 minutes. Beef tenderloin must be juicy and tender.
  • Serve Peruvian lomo saltado on a plate with white rice and French fries on the side.
