  • In a pot over medium heat, heat a bit of vegetable oil. Add onion, garlic, tomatillos, guajillo chiles, ancho chiles, bay leaves, clove, black peppercorns, oregano, and cumin powder. Fry for 8 minutes. Add orange juice. Transfer ingredients to a blender, season with salt and blend until smooth. Set aside.
  • In a bowl, add ram and season with salt and pepper. Pour blended sauce into the bowl. Let marinate for 30 minutes.
  • Place marinated ram, an avocado leaf, and some nopal strips over 11.8 x 7.8-inch parchment paper pieces. Fold each parchment paper and tie with kitchen twine. Set aside.
  • In a steamer, cook ram mixiotes for about 1.5 hours until meat is tender.
  • Serve ram mixiotes with nopales garnished with pickled red onions.
