  • 3 tablespoons butter, for frying
  • 1/4 cups onion, cut into quarters
  • 1 teaspoon garlic, finely chopped
  • 1 cup white rice, rinsed, soaked in lukewarm water for 10 minutes, and drained
  • 2 cups chicken broth
  • some salt
  • 1 cup cilantro, leaves
  • 1 cup butter, cut into cubes
  • 1/4 cups yellow corn kernels, canned, drained, for garnish
  • 1/4 cups cilantro, leaves, for garnish

  • In a saucepan over medium heat, melt butter and cook onion and garlic. Add rice and stir constantly until brown. Add chicken broth and salt.
  • Once preparation comes to a boil, add cilantro and lower heat. Once rice is tender, add butter and mix until incorporated. Cover with plastic wrap and poke small holes so the rice cooks faster and is fluffier.
  • Serve butter rice in a soup dish garnished with yellow corn kernels and cilantro.
