  • In a blender, combine tomato, garlic, onion, and a bit of broth and blend until smooth. Set aside.
  • In a small pot, heat oil over medium heat. Fry rice for about 5 minutes until golden brown. Pour blended mixture into the pot and cook for 5 minutes until rice absorbs the liquid.
  • Add remaining broth, carrots, peas, serrano chiles, and salt. Cover and bring to a boil. Lower heat to medium heat and cook for 25 to 30 minutes.
  • Turn off heat and let sit for 10 minutes until cooked through. Stir for fluffy rice. Serve Mexican red rice.
