  • Marinate mojarra fish in garlic powder, salt, and pepper. Cover the whole fish so it seasons thoroughly.
  • Mix flour, garlic powder, salt, and pepper. Coat mojarras in previous mixture.
  • In a deep skillet over medium heat, heat vegetable oil and fry mojarras for about 10 minutes each. Remove from oil and place on a paper towel-lined plate to remove excess oil.
  • For the a la diabla salsa: In a pot, place guajillo chiles, morita chiles, árbol chiles, and orange juice and heat for 5 minutes until chiles are tender. Transfer ingredients to a blender. Add water, onion, and garlic and blend until smooth.
  • In a deep skillet over medium heat, add butter and fry the salsa for 5 minutes or until it turns color. Add fish and spoon salsa over. Remove fish.
  • Serve authentic mojarra a la diabla garnished with orange wheels, lime, lemon, and cilantro leaves and with rice and salad on the side.
