Cheesy Seafood Alambre

Great for a weekend reunion with friends or family, this cheesy seafood alambre is also a good option for Lent. Prepared with octopus, shrimp, and squid and combined with mushrooms and bell peppers, this alambre de mariscos is topped with melted cheese, a flavorful combo nobody will resist!

  • 2 tablespoons olive oil
  • 1/2 cups onion, cut into slices
  • 1 cup green bell pepper, cut into medium-sized cubes
  • 1 cup red bell pepper, cut into slices
  • 1 cup yellow bell pepper, cut into slices
  • 1 cup button mushrooms, sliced
  • 1 cup shrimp, whole and clean
  • 1 cup squid, cut into rings
  • 1 cup octopus, cooked, cut into cubes
  • 1 1/2 tablespoons seasoning sauce
  • salt
  • pepper
  • 2 cups Oaxaca cheese, shredded
  • flour tortillas, for serving
  • some guacamole, for serving
  • limes, for serving

  • In a skillet with enough hot oil, sweat onion until translucent. Add green, red, and yellow bell pepper and cook for some minutes. Add mushrooms, shrimps, squid rings, and cooked octopus. Add seasoning sauce, salt, and pepper to taste. Stir and cook for 6 minutes over low heat. Add shredded Oaxaca cheese and let it melt. Remove from the heat.
  • Serve on a large platter. Serve with flour tortillas, guacamole, and lime wedges.
