Pineapple Teriyaki Salmon

  • 1/2 cups teriyaki sauce
  • 1 teaspoon fresh ginger, chopped
  • 1/2 teaspoons fennel, dried
  • 1/4 cups orange jam
  • 1/4 cups canned pineapple syrup
  • 800 grams salmon, cut into 7-ounce fillets
  • some canned pineapple
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 2 tablespoons vegetable oil
  • 2 cups basmati rice, for garnish
  • sesame seeds, for garnish
  • chives, for serving

  • In a pot over medium heat, heat teriyaki sauce. Add ginger, fennel, orange jam, and canned pineapple syrup and cook over low heat for 5 minutes.
  • Season salmon with salt and pepper. In a skillet with oil, place salmon and cook over medium heat to desired level of doneness.
  • Add a bit of teriyaki sauce and cook until thickened and glossy. Spoon teriyaki sauce over the salmon occasionally.
  • In a bowl, place canned pineapple rings and coat them in the remaining teriyaki sauce. Grill pineapple rings over high heat on both sides until grilled marks are obtained.
  • On a plate, place a bed of basmati rice and place salmon on top. Garnish pineapple teriyaki salmon with pineapple rings, chives, and sesame seeds.
