Shrimp-Stuffed Green Enchiladas

  • 1 tablespoon vegetable oil
  • 1/4 onions, cut into quarters
  • 1 clove garlic
  • 5 tomatillos
  • 3 Habanero chiles
  • 1/2 cups fresh cilantro
  • 1/2 cups chicken broth
  • 1 cup cream cheese
  • 1/2 cups sour cream
  • 1/2 cups fresh cilantro
  • 2 allspice berries
  • 1 tablespoon butter
  • 2 tablespoons garlic, finely chopped
  • 3 cups shrimp
  • 1/4 cups sour cream
  • 2 tablespoons chipotle chile, ground
  • some vegetable oil
  • 12 corn tortillas
  • 1 cup Manchego cheese, sliced
  • some sour cream, for garnish
  • some red onion, cut into rings, for garnish
  • some fresh cilantro, for garnish

  • Preheat oven to 356 °F.
  • For the green sauce: In a skillet with oil, cook onion, garlic, tomatillo, Habanero chile, and cilantro for 10 minutes or until vegetables soften. Add chicken broth. Let reduce. Remove. Cook slightly.
  • Transfer previous preparation to a blender. Add cream cheese, sour cream, cilantro, and allspice. Blend until a homogenous sauce is obtained. Set aside.
  • For the shrimp-stuffed enchiladas: In a skillet over medium heat, melt butter. Cook garlic and shrimp until they turn color. Add cream and ground chipotle. Season with salt and pepper. Set aside.
  • In a skillet with oil, slightly fry tortillas until softened. Drain on a paper towel- lined plate. Stuff tortillas with shrimp. Fold like enchiladas.
  • In a baking dish, pour a bit of green sauce. Arrange enchiladas. Spoon over more green sauce. Sprinle Manchego cheese. Bake until cheese broils.
  • Serve shrimp-stuffed green enchiladas hot. Garnish with cream, red onion rings, and cilantro leaves.
