Shrimp-Stuffed Güero Chiles

  • 1/2 cups fresh cilantro, finely chopped
  • 2 limes, zest and juice

  • 2 cups shrimp, tiny
  • 1 clove garlic
  • 1/4 onions
  • 6 tomatillos
  • 4 morita chiles
  • salt
  • 3 tablespoons vegetable oil
  • 4 güero chiles
  • 3 tablespoons butter
  • 3 tablespoons garlic, finely chopped

  • In a bowl, combine cilantro, lime juice, lime zest, salt, and pepper. Add shrimp and marinate in the fridge for 20 minutes.
  • For the morita chile salsa: In a pot with water, cook tomatillos, garlic, onion, and morita chiles over medium heat for 5 minutes. Remove ingredients from water. Transfer previous ingredients to a blender, add salt, and blend until smooth.
  • In a skillet, heat oil over medium heat. Pour salsa and cook for 5 minutes. Set aside.
  • Char güero chiles. Place charred güero chiles in a plastic bag and let sweat for 5 minutes. Remove chiles from the bag. Using a knife, peel, trim, and seed chiles. Set aside.
  • In a skillet, cook shrimp over medium heat for 5 minutes. Stuff güero chiles with previously cooked shrimp.
  • Spread a bed of morita chile salsa over a plate and arrange shrimp-stuffed güero chiles on top.
