  • On a griddle over medium heat, roast chiles, garlic, and onion until completely charred. Remove and place chiles on a plastic bag. Close and let sweat for 15 to 20 minutes.
  • For the sauce: In a blender, combine beans, bean broth, roasted garlic, roasted onion, epazote, and hoja santa and blend until smooth.
  • In a saucepan, heat one tablespoon of oil and fry bean sauce for about 10 minutes or until thickened. Season and set aside.
  • For the stuffing: Heat remaining oil and fry onion and garlic. Add shrimp and cook for some minutes. Add tomatoes, season with salt and pepper, and add cilantro. Remove and set aside.
  • Remove chiles from plastic bag and carefully slice open each chile in half. Using a spoon, seed and trim chiles.
  • Stuff chiles with shrimp mixture. Ladle bean sauce on a plate and arrange stuffed chiles on top. Garnish shrimp-stuffed güero chiles in bean sauce with sour cream, pea sprouts, and cherry tomatoes.
