  • 1 kilo romeritos, rinsed and cooked
  • 500 grams potato, peeled and cooked
  • 1 cup dried shrimp, peeled
  • 500 milliliters chicken broth
  • 3 pasilla chiles, charred
  • 3 ancho chiles, charred
  • 1/4 cups toasted peanuts
  • 1/4 cups almonds, toasted
  • 1/4 cups raisins
  • 1 sprig cinnamon
  • pepper
  • some vegetable oil

  • For the mole: Combine chicken broth, chiles, raisins, peanuts, almonds, cinnamon stick, salt, and pepper in a blender and blend until smooth.
  • Strain the sauce and set aside.
  • In a large skillet over medium heat, cook mole sauce for 10 minutes.
  • Add romeritos, potatoes, and shrimp to the mole sauce. Season with salt and pepper. Bring traditional Mexican romeritos to a boil.
