Homemade Migas

  • In a pressure cooker, cook pork chump with onion. Add water until it reaches 1.9 inches above pork and salt. Cook for 40 minutes. Remove from heat when pressure cooker whistles.
  • Rehydrate guajillo chiles in water for 3 minutes. Transfer guajillo chiles and water to a blender and blend until smooth.
  • Soak bolillo rolls in cold water for about 3 minutes or until soft. Using your hands, squeeze water out of bolillo rolls and press tightly to shape them into little balls. Set aside.
  • Heat vegetable oil over medium heat in a pot and fry garlic cloves until brown. Add blended sauce and fry for 2 minutes. Add pork and a bit of pork broth and cook for 5 minutes. Add bolillo balls and stir gently. Migas must begin to fall apart, never mush. Mix until perfectly incorporated and remove from heat.
  • Serve homemade migas topped with chopped onion, oregano, fried árbol chile, and lime juice, and tortillas on the side.
