Quick Tortilla Soup

Tortilla soup is a delicious and traditional Mexican soup loved by many! Also known as Aztec soup, tortilla soup has been a part of Mexican cuisine since the pre-Columbian era.   • 1/2 cups onion, cut into large chunks, for the broth
  • 1 clove garlic, whole, for the broth
  • 1 1/2 cups tomato, cut into quarters, for the broth
  • 2 pasilla chiles, trimmed and seeded, for the broth
  • 2 guajillo chiles, trimmed and seeded, for the broth
  • 2 tortillas
  • 4 cups chicken consommé, for the broth
  • 1 sprig epazote, for the broth
  • salt
  • pepper
  • 2 cups tortillas, cut into strips, for garnish
  • some vegetable oil
  • Oaxaca cheese, shredded, for garnish
  • sour cream, for garnish
  • avocado, cut into cubes, for garnish
  • pasilla chile, sliced and fried, for garnish
  • pork rinds, cut into small chunks, for garnish

  • In a pot, combine a tablespoon of oil, onion, garlic, and tomato. Cook for 5 minutes. Transfer all the ingredients to a blender. Add chiles, tortilla, and chicken consommé and blend to a purée.
  • Transfer mixture to the pot and add epazote, salt, and pepper. Cook for 15 minutes.
  • In a pot with hot oil, fry tortillas for 5 minutes or until golden brown over medium heat. Reserve on a platter with paper towels.
  • Spoon soup in a soup bowl. Garnish with fried tortillas, a tablespoon of sour cream, Oaxaca cheese, avocado cubes, pork cracklings, and sliced and fried chiles.
