  • In a semi-deep pot, add oil, garlic, onion, tomatoes, and fry for 3 minutes. Add red wine and bring to a boil and cook for 5 minutes until reduced by half.
  • Transfer previous preparation to a blender and blend until smooth.
  • In a pot, add lentils, vegetable broth, and salt. Bring to a boil and cook for about 30 minutes until the lentils are soft but do not fall apart.
  • Fry plantains in hot oil for about 5 minutes.
  • For the sofrito: In a deep pot over high heat, add oil, onion, celery, chorizo, and bacon. Cook for 5 minutes. Add carrots and tomato sauce. Add lentils with broth, stir all the ingredients, and cook for 10 more minutes.
  • Serve red lentil & chorizo soup topped with fried plantains.
