Traditional Sopa Tarasca

  • 1/2 onions, cut into eighths
  • 1 clove garlic, cut into chunks
  • 2 tomatoes, cut into cubes
  • 1 cup beans, cooked
  • 1 cup chicken broth
  • 2 pasilla chiles, trimmed, seeded, and rehydrated
  • 2 cups chicken broth
  • 2 leaves dried bay
  • 1 teaspoon thyme
  • 1 teaspoon marjoram
  • some vegetable oil
  • 1 cup corn tortillas, cut into strips
  • 1/2 cups ancho chile, cut into thin strips
  • some sour cream, for serving
  • some queso fresco, crumbled, for serving
  • some avocado, for serving

  • On a griddle over high heat, roast onion, garlic, and tomato. Set aside.
  • Transfer roasted ingredients to a blender. Add beans, bean broth, pasilla chile, chicken broth, bay leaves, thyme, and marjoram, and blend until smooth.
  • In a skillet, heat a bit of oil and cook previous mixture until thick.
  • In a skillet, heat oil over medium heat and fry tortilla strips until crispy. Remove from oil and drain on a paper towel-lined plate to remove excess oil. Char serrano chile strips without burning, remove from oil, and drain on a paper towel-lined plate to remove excess oil.
  • Serve traditional sopa Tarasca in a soup bowl and top with sour cream, fried tortilla strips, charred ancho chile, queso fresco, and avocado.
