  • In a skillet over medium heat, heat olive oil and add potatoes and onion. Cook over medium heat for 6 minutes. Stir potatoes and cook for 5 more minutes. Remove from heat and set aside.
  • In a bowl, whisk eggs, salt, and pepper. Add previously cooked potatoes and stir with a spatula. Set aside.
  • In a skillet, add a sash of oil and pour in egg and potato mixture. Cook covered over low heat for 10 more minutes. Flip using a plate. Add more olive oil and transfer back to the skillet with the uncooked side facing down. Cover, cook for 5 more minutes, and remove from heat.
  • Serve Spanish tortilla on a plate with bread on the side.
