  • On a chopping board, cut ears corn lengthwise into 4 as shown in the video. Set aside.
  • Place adobadas flavored chips in a resealable bag and crush them to a fine powder with a rolling pin.
  • In a bowl, mix BBQ sauce, hot sauce, buffalo sauce, garlic powder, onion powder, lime pepper, and salt. Dip corn ribs in the mixture.
  • Place corn ribs on a baking sheet. Sprinkle with crushed chips and bake for 30 minutes at 392° F.
  • For the dressing: In a bowl, mix sour cream, mayonnaise, and chives and season with salt and pepper.
  • Serve corn ribs with dressing and potato wedges on the side and pair with a beer.
