Fish Tacos Al Pastor

  • 2 guajillo chiles
  • 1/4 onions
  • 1/2 cups orange juice
  • 1/4 sticks achiote
  • 1 clove garlic
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 6 fish fillets, cut into strips
  • 10 árbol chiles
  • 2 guajillo chiles
  • 2 cloves garlic
  • 2 tomatillos
  • some water
  • 2 tablespoons vegetable oil
  • 12 corn tortillas, blue corn
  • 4 slices pineapple
  • onion
  • fresh cilantro
  • lime

  • For the marinade, combine guajillo chile, onion, orange juice, achiote, garlic, cumin, oregano, and salt in a blender and blend until smooth.
  • Pour previous preparation on fish and marinate for 30 minutes.
  • For the chile de árbol salsa: In a skillet, fry árbol chiles, guajillo chiles, garlic, and tomatoes. Blend with a bit of water if needed. Set aside.
  • In a skillet over medium heat, add oil. Cook fish for 5 minutes or until cooked through.
  • On a griddle heat tortillas. Serve fish with roasted pineapple, onion, cilantro, salsa, and a dash of lime.
