Preparation
For the marinade, combine guajillo chile, onion, orange juice, achiote, garlic, cumin, oregano, and salt in a blender and blend until smooth.
Pour previous preparation on fish and marinate for 30 minutes.
For the chile de árbol salsa: In a skillet, fry árbol chiles, guajillo chiles, garlic, and tomatoes. Blend with a bit of water if needed. Set aside.
In a skillet over medium heat, add oil. Cook fish for 5 minutes or until cooked through.
On a griddle heat tortillas. Serve fish with roasted pineapple, onion, cilantro, salsa, and a dash of lime.
Presentation
Serve fish tacos al pastor on blue corn tortillas and top with pineapple, cilantro, and lime.
Tips
