  • For the adobo sauce: On a griddle, char ancho chile, guajillo chile, cascabel chile, garlic, onion, allspice berries, cilantro seeds, and cumin seeds. Soak chiles in hot water for 5 minutes. Transfer all ingredients to a blender, add a bit of chile soaking water, season with salt, and blend until smooth.
  • For the tuna stuffing: In a skillet, heat oil and fry tuna for some minutes. Pour in adobo sauce and cook for 10 minutes. Set aside.
  • For the tuna taquitos: Stuff tortillas with tuna adobo and roll up. Secure tuna taquitos with toothpicks to help them hold their shape. Fry for 5 minutes.
  • For the guacamole: In a bowl, mix onion, serrano chile, cilantro, avocado, and lime juice. Season with salt. Add mango and mix gently.
  • Serve tuna taquitos with guacamole garnished with cream and cheese, with beans on the side, and paired with the drink of your choice.
