  • On a chopping board, shred oyster mushrooms by hand.
  • Combine achiote, orange juice, chile guajillo, onion, garlic, vegetable broth, oregano, salt, and pepper in a blender and blend until smooth.
  • In a small pot, add olive oil and cook garlic and oyster mushrooms for 5 minutes. Add thyme, achiote sauce, and bay leaf. Cook over low heat for 10 minutes or until reduced, stirring constantly to keep the preparation from sticking.
  • Serve vegan cochinita tacos with pickled onions.
