  • For the dough: Transfer corn kernels to a blender and blend little by little. Put in a bowl and set aside.
  • Add sugar and baking powder. Mix thoroughly to incorporate all ingredients in a homogenous mixture.
  • Add one tablespoon of dough to each corn husk. Fold in half and wrap with the corn husk as shown in the video. Set aside.
  • In a pot on a water bath, arrange uchepos vertically to prevent the stuffing from spilling over. Cover with remaining corn husks. Cover and cook over medium heat for 45 minutes or until cooked through.
  • Serve uchepos in a clay dish and pair with champurrado.
