  • 1 cup refried beans, black
  • 30 corn husks
  • 1 1/2 cups water, lukewarm
  • 2 cups masa dough
  • 1/2 cups lard
  • 1/2 cups sour cream
  • 1 cup Manchego cheese, shredded
  • 1 1/2 cups mole sauce, black

  • In a skillet, sweat onion.
  • Add black refried beans and mole and mix.
  • Line tamales pot with corn husks.
  • Mix water, masa dough, lard, and sour cream to the desired consistency.
  • Spread a bit of tamal dough in each corn husk and add two tablespoons of bean and mole mixture.
  • Add a bit of shredded Manchego cheese.
  • Fold tamal and wrap the top part with a corn husk strip or a ribbon.
  • Pour water into the tamales pot and steam them for 1 hour or until the dough comes off the corn husk once opened.
  • Serve beans and mole tamales with green or red salsa on the side.
