  • 50 grams achiote
  • 2 cloves garlic, roasted
  • 1/4 onions, roasted
  • 1 1/2 cups orange juice, bitter
  • 1/4 tablespoons cumin seeds, toasted
  • 1/2 tablespoons oregano
  • 3 cups button mushrooms
  • 2 tablespoons vegetable oil
  • 1/2 cups white onion, finely chopped
  • 150 grams vegetable shortening, for the tamal dough
  • 4 cups masa mix for tamales, for the tamal dough
  • 1 cup vegetable broth, for the tamal dough
  • 1 tablespoon baking powder, for the tamal dough

  • For the marinade: Combine achiote, garlic, onion, orange juice, cumin, and oregano in a blender. Blend until smooth.
  • In a skillet over medium heat, heat oil. Fry onion, add mushrooms, and cook for 3 minutes or until mushrooms release their juices. Add the adobo and cook for 5 minutes. Season with salt and pepper. Set aside.
  • For the tamal dough: Beat vegetable shortening until creamy. Add masa mix for tamales little by little, alternating with vegetable broth. Add baking powder and salt. Mix until a smooth dough is formed.
  • On a griddle, roast banana leaves to soften them.
  • Place a bit of dough on the roasted banana leaf, add mushrooms, and fold the banana leaf over the center as if folding a letter.
  • Arrange tamales in a steamer with water. Cook for 40 minutes or until cooked through.
  • Serve vegan pibil mushroom tamales with pickled onions and a Mexican fruit cooler.
