Meat and Dried Fruit-Stuffed Turkey

  • 1 cup bacon, cut into small-sized cubes, for the stuffing
  • 1 cup chorizo, chopped, for the stuffing

  • For the stuffing: In a skillet over medium heat, add bacon. Once it renders fat, add chorizo. Cook for 3 minutes. Add onion and cook until soft. Add garlic, celery, ground pork, and ground beef. Season with salt and pepper. Cook for 10 minutes.
  • Add almonds, pecans, cranberries, and dates. Adjust seasoning. Add thyme, white wine and cook covered for 10 more minutes. Remove from heat and set aside.
  • For the spiced butter: In a bowl add butter, thyme, oregano, and rosemary. Season with salt and pepper. Mix to a homogenous mixture. Set aside.
  • Stuff turkey with a spoon. Using a brush, baste turkey with spiced butter. Bake for 3 hours at 356 °F. Set aside.
  • Serve meat and dried fruit-stuffed turkey on a platter. Garnish with orange and lemon round slices, rosemary, and thyme.
  • Cut a slice, serve with stuffing, and pair with a glass of white wine.
