Red Wine Brined Turkey & Grape Compote

  • 1 turkey
  • 5 liters red wine
  • 1 bunch aromatic herbs
  • 10 allspice berries
  • 1 head garlic
  • 100 milliliters balsamic vinegar, for the grape compote
  • 500 grams grapes, green and red, for the grape compote
  • 150 grams raw sugar, for the grape compote
  • 50 milliliters water, for the grape compote
  • 300 grams butter, for the grape compote
  • 50 grams salt, for the grape compote
  • 10 grams ground pepper, for the grape compote

  • Pour wine into a large container where you can submerge the turkey. Add aromatic herbs, garlic head split into two, and allspice berries. Place turkey in brine and refrigerate overnight.
  • Remove turkey from brine. Rub with butter. Season with salt and pepper. Place in an oven bag. Bake at 356 °F for about 80 minutes.
  • Cut grapes in half and fry with a bit of butter. Little by little, add sugar and vinegar. Reduce mixture by almost half. Season and add water.
  • The grape compote must be thick. Stir carefully to keep grapes from falling apart.
  • Serve red wine and grape compote turkey at the center of the table.
