  • 250 grams butter
  • 1/2 bunches fresh parsley, finely chopped
  • 20 grams salt
  • 10 grams pepper
  • 1 smoked turkey
  • 500 grams fruit, a wide array, for the sauce
  • 1/2 cloves ground garlic, for the sauce
  • 5 grams butter, for the sauce
  • 10 grams salt, for the sauce
  • 20 grams piloncillo, grated, for the sauce

  • Mix melted butter, parsley, salt, and pepper. Brush down turkey with previous mixture. Place in an oven bag. Bake at 392 °F for 1 hour.
  • Remove bag. Brush down with extra butter until brown and cooked through.
  • For the sauce: Combine fruits, garlic, and previously melted butter in a blender. Blend until smooth. Season with salt and pepper. Sweeten with piloncillo. If the sauce is too thick, add a bit of water. Stir until incorporated.
