  • On a griddle over medium heat, roast onion, garlic, tomatoes, and chiles. Remove and rehydrate chiles with hot water for 10 minutes or until softened. Peel garlic and set aside.
  • Transfer previous ingredients to a blender. Add chicken broth, season with salt and pepper, blend until smooth and set aside.
  • In a saucepan over medium-low heat, heat oil. Fry fideo pasta until golden brown. Stir constantly to keep fideo pasta from burning. Remove excess oil on a paper towel-lined plate.
  • Pour blended mixture into the sauce pan and bring to a boil. Cover and lower heat. Cook until fideo pasta is cooked through and liquid evaporates.
  • Put fideo seco in individual baking pans and press tightly. Unmold three chile fideo seco and garnish with sour cream, nopales, avocado, queso fresco, cilantro, and chopped radish.
