Traditional Enchiladas Mineras

Enchiladas are an iconic Mexican dish that combines tortillas and chile, two classic ingredients that are a must when it comes to Mexican food.   • For the sauce: Combine rehydrated chiles, garlic, cumin, oregano, and water in a blender and blend until smooth.
  • Cook sauce for some minutes in a small pot with lard. Season with salt. Remove from heat and cool slightly. Working one at a time, dip the tortilla in sauce to coat. Fry in hot oil over low heat. Drain and reserve.
  • Using the same oil, fry potatoes and carrots. Season with salt and pepper. Reserve.
  • For assembling the traditional enchiladas mineras: Stuff tortillas with ranchero cheese and fold in half. Top enchiladas with fried potatoes and carrots, lettuce, and pickled Jalapeño chiles.
