  • For the Habanero sauce: In a pot, fry onion, Habanero chile, and tomato until golden brown. Add tomato purée and season with salt and pepper. Cook for 20 minutes over low heat until a lumpy sauce is obtained.
  • In a skillet, add a bit of oil and fry tortillas until slightly golden brown. Set aside.
  • In the same skillet, cook fried eggs. Set aside.
  • For assembling traditional huevos motuleños: Spread a spoonful of refried beans on a tortilla. Place fried eggs on top and spoon the Habanero sauce over.
  • Garnish traditional huevos motuleños with fried plantain, cooked peas, sliced red onion, Cotija cheese or queso fresco, ham, and avocado cubes.
  • Garnish traditional huevos motuleños with fresh cilantro leaves.
