  • In a pot, heat a bit of oil to sear beef shank. Cook for 3 minutes over high heat. Add garlic and onion.
  • Add water and bring to a boil for 45 minutes giving all the flavors time to meld. Skim off scum with a slotted spoon.
  • Add ears corn, potato, and carrots. Cook for about 30 minutes.
  • Add chayote and green beans. Cook for 20 minutes.
  • Add zucchini, spearmint, and cilantro. Cook for 10 minutes.
  • Serve traditional puchero hot with chopped cilantro and Jalapeño chile.
