  • 6 potatoes, peeled, cut into cubes
  • 3 liters water
  • 2 tablespoons salt
  • 2 bay
  • 3 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon salt
  • 1 cup vegetable broth
  • 1/4 cups parsley, finely chopped
  • 1 tablespoon pepper
  • some parsley, chopped, for garnish

  • In a pot with boiling water, cook potatoes with a bit of salt and bay leaf until very soft. Remove and drain.
  • In a pot over medium heat, heat olive oil. Cook potatoes for 1 minute. Add garlic powder, salt, vegetable broth, and parsley. Using a potato masher, make purée until a soft mixture is obtained. Remove and set aside.
